Shrimp Pita Pizzas

 

• 3 tablespoons olive oil

• 1/4 teaspoon freshly ground black pepper

• 1/8 teaspoon salt

• 4 large pitas (6-7 inches across)

• 1/4 cup plain Greek yogurt

• 3 tablespoons red wine vinegar

• 1 lb. cleaned shrimp (20-24 count)

• 4 cups loosely packed baby spinach, chopped

• 1 cup classic hummus

 

Wrap pitas in foil and warm in 350 degree oven while cooking shrimp.

Make a dressing: combine yogurt, oil, vinegar, 1/8 teaspoon pepper and the salt in a small bowl. Whisk until smooth.

In a medium bowl toss shrimp with 3 tablespoons dressing. In a second bowl, toss spinach with 1/4 cup dressing.

Heat a grill pan or large cast-iron skillet over medium-high. Add shrimp and cook 1-2 minutes. Flip and cook 1-2 minutes more, until cooked through. Remove to a clean bowl and toss with remaining dressing.

Spread hummus on warm pitas. Top with spinach and shrimp. Sprinkle with 1/8 teaspoon pepper.
